Ethiopian Cuisine
- A Brief History
Ethiopia
is a region of mountains, highlands, valleys, jungles, and deserts,
much of it thousands of feet above sea level (The capital - Addis
Ababa, is over 7000 feet above sea level). Ethiopia also contains
one of the most culturally diverse populations on earth, with
many different ethnic groups scattered throughout the country.
Ethiopia also has some of the oldest human cultures on earth.
Injera, the most important food staple of Ethiopia, has been around
for more than 2000 years.
So
with the unique climate and culturally diverse population, you
have the ingredients set for a unique and exotic type of cuisine.
And because of the isolation of the central highlands and other
remote areas of Ethiopia, some flavorings are only available naturally
in Ethiopia.
So
relatively speaking, Ethiopian Cuisine is very much a new taste
in many regions of the world.
